Ingredients
- 18g whole bean coffee
- 240ml fresh milk, cold (whole or oat)
- 2 tsp vanilla syrup, or 1 tsp vanilla extract + 1 tsp sugar
- 4–5 ice cubes

How to make iced vanilla latte
- Fill a 350ml glass with ice to two-thirds. A taller glass keeps the layers visible.
- Pour cold milk over the ice. Add vanilla. Stir. Mixing in milk before the espresso prevents the syrup from settling.
- Pull a double shot (36g, 25–30 seconds). Pull it directly into a small jug, not the glass.
- Froth the cold milk lightly with a handheld frother for 10 seconds. Just enough for texture, not foam.
- Pour the espresso over the back of a spoon to layer it on top. The dark-on-light look is half the drink.
💡 Tip: Use slightly more sugar than you’d use in a hot drink. Cold mutes sweetness — what tastes ‘right’ hot will taste flat iced.
Variation
**Outdoor twist:** Pre-make the milk-vanilla base in a thermos at home. Pull the shot fresh on-site with a portable machine (see Recipe 09). Pour over ice from the cooler.
